Pupusas
Ever thought of filling your tortilla with cheese? maybe cheese and beans with meat? The people of El Salvador have a name for this invention, it's called Pupusas and it's entirely delicious.
Pupusas are native to the tiny country of El Salvador and they reach as far as the outskirts of Central America. Like any other folkloric food, pupusas are made silghly different depending on the region. Despite the anomalies, the concept behind the pupusa is the same: Tortilla stuffed with goodies.
The mecca of pupusas is located in the city of Olocuilta, El Salvador, in between the capital and the international airport. It is here where you can find a plethora of 'pupuserias' (little restaurant shacks) making pupusas on demand. Pupusas made in Olocuita are typically made of corn, but the I personally love the pupusas made of rice. They're heavy and slightly greasy but on top of that they're freaking tasty. By rule of thumb, all pupusas should contain cheese and your choice of combination such as: refried beans, pork, vegetables, anything really, even shrimp (not recommended).
Here in Tampa, I have yet to find a real Salvadorean pupuseria. Often times they're Mexican restaurants selling pupusas but they're either too greasy or too small or too expensive. My dad recently came back from Virginia and he brought us a whole bunch of pupusas that are the closest thing to the real deal. Sigh, one day, I will find my pupuseria.
How did you come to be
How did you come to be familiar with pupusas? I didn't know anything about them until I made a trip to San Francisco. Apparently there is a Salvadoran community there because there were several places that had them. We had pork and squash blossom in The Mission District. Very good. I guess I would say they are a little bit similar to authentic Mexican gorditas.

So I hear; the Mission District is has a decent centroamerican scene. I wish we had something similar in Tampa.
I used to live in El Salvador for 10 years so I got to know a lot of the folkloric cuisine.
I would expect the 'pupusa boom' to happen here any moment now.
